Dirty Hands is the work of Chef Hüseyin Turan, a Michelin-trained, German-born chef with Turkish roots. Growing up in Germany, he watched how Turkish guest workers turned döner into an everyday staple, and he brings that Turkish-German street food culture to Poblacion. The idea was never to call it "Hüseyin's shawarma house" — instead, guests build their own shawarma from a choice of bases and globally inspired flavors, then dig in with their hands. The white-and-blue interior draws on the coastal town of Alaçatı, Turkey, and the vibe is unhurried: come over, have a drink, share some mezze, and get your hands dirty.
